well..there it is. my raw "burger". I will NEVER MAKE THIS AGAIN! I even had left overs. I hate throwing things away yet I had ZERO problem with tossing this stuff. So bad. sososososo bad. I still ate it. Because it took me almost an hour to get the "cheese" to the consistency I would tolerate. So it took me like, an hour and a half to make this crap and I was starving and I didnt want to think of something else to eat. So I ate it. Ugh.

Delicious Salad!!
Im in love with this salad! Spinach, arugala, beans sprouts, onions, avacado, beats and red peppers in my raw ginger and sesame seed dressing. soooo good! That is all! :)

NORI ROLLS!!!!!!!!11
OOO MMAAAHH...GAAAHHHDD!!!!11 So. Im in love with making Nori Rolls!! Like, for realzies!! So, for those of you that dont know what a Nori Roll is, its seaweed. its whats used to wrap sushi rolls and what not. They dont always come raw..but I got me some raw ones and they are SOOO good. Hard to work with, I def need one of those bamboo sushi roll thingies but I did pretty well for me first try!
So this is how I made it!
I made an almond paste for the "sushi" part. I combined almonds ( about two handfulls that I soaked for 2 hours), onion, garlic, fresh pepper (a lot), and some raw salad dressing that I got that was sesame ginger Which is REALLY good!
Blended it all up in the food processor and got this great paste of like onion dip consistency.
I then spread it on the nori roll, cut up some avacado (my favs), peeled some carrot, shopped some red pepper and then one of the BEST parts...sliced up a marinated raw beet that i got which was spicy and sweet and went PEERFECT with everything...Also! The fishy taste of the seaweed actually made me feel like I was eating fish. The Nori roll didnt have an overpowering sea water taste. It was great!
I then did my best at rolling. I tried to cut it into little sushi pieces but the roll with the paste was just a bit smooshy so I just ate it and took bites of it. But...I was pretty full for at least, 7 hours when I really got hungry!!! I have left over paste and everthing and will be making this again later in the week...possibly tomorrow! <3
My Raw Ice Cream Attempt:/
So. I looked up a very easy recipe for raw chocolate ice cream that did NOT have bananas...cause I'm allergic. Well, I found several and I tried one that had raw honey because, well, I bought some so I should use it!! I thought I would make an attempt to make it like a chocolate mint ice cream and I put Mint leaves in it. Bad idea :/ It prob needs like mint extract or something because the mint leaves like took over the taste and not in a mint freshness kinda way. In like a ..leafy, green, earthy kinda way. so...I kinda felt like I was eating chocolate dirt. Its not HORRIBLE after it froze and I threw some cocoa nibs in it..but tomorrow I think I'm going to put back in the blender and throw some more cocoa powder in it and maybe a date or two and sweeten it up a little. I also need to buy more nuts. I'm outta nuts! but they are expensive so I'm prob going to live off of salads and green smoothies the rest of the week cause I have a shit ton of greens. So, I may not get to creative the rest of the week. which bums me out.

Cheesecake Outcome!! :)
well....my cheesecake was a grand success!! I REALLY liked it. Like, A LOT!! The consistency of it was like real cheesecake. Very creamy and awesome. And the puree strawberries on top were like the perfect fit. Ill def be making this again!!

Dessert!!!!!!!!!!!
sooooo...I didn't eat raw today. Like I said I start monday. But I did have a nice veggie burger! My first actually. Wasn't bad! ANyway. The above picture is a picture of the pie crust I just made!! IT. IS. SOOOO GOOD!!! Im making a raw cheesecake tomorrow for a party. Im really hoping it turns out pretty good and people like it. Shit, I hope I Like it!! :) Pie crust is just made out of macadamian nuts and dried dates. thats it. then i squished it into the bottom of a springboard pan. Tomorrow I will make the filling. Ill be using pecans and coconut oil, among other ingredients. Im very excited actually. However...a BIG however. To simply by the ingredients for this cheesecake cost me THIRTY FIVE FRIGGIN DOLLARS! that, I am not so happy about. I realizing this week is gonna leave me pretty broke. Like...drained broke. But, whatevsies. hopefully it will be worth it when i feel better and look better! :)

First attempt!!!!!
SOO!!! I had my first go at eating raw today! Ive eaten raw all friggin day! I feel ok. Im a little hungry!! I had a green smoothie this morning as school! Consisting of Spinach, mango, apples and grapes. I then came home and made "pasta and sauce" aka... raw zucchini as pasta (ubber thinly sliced) and then I cut up a bunch of tomatos. I used one roma, a few sundried totamtoes and some onion, garlic, italian seasoning and olive oil and pulsed it in the blender as the "sauce". It was kinda like a salsa. The picture above is what I made today!! It was def tasty. Totally different texture. But...tasty.
For Lunch at work tonight I just simply made a tomato salad. which was pretty much everything I made in the "sauce" except I didnt put it in the blender and I just cut up cherry tomatoes instead of the roma!

What the hell am I doing!?
For those of you who dont know me. Im Katie. Im 29 years old and I live in Philly. Ive never done a blog before, I cant spell, my vocabulary is crap and my geography is the pitts!! But Im doing this for myself to hopefully better inspire and keep myself motivated for the next week as I try to eat raw for one week!
Ive done some research and talked to some people for a few months now on the raw lifestyle. Ive dipped and dabbled into it with green smoothies and trying vegan and I like it all. But...I need to make a serious change in my life, nutrtionally. And I figure, someone in my position needs to go big or go home! So...Im not doing vegetarian and im not doing vegan...im going straight for the raw! For one week Starting Sunday night (cause sunday night is my monday, I work 3rd shift) I will be doing my best at eating a raw diet!
In the past three years I have very seriously changed my eating habits and my lifestyle. Three years ago my diet consisted of PBR and Checkers. Not kidding. I was drinking a lot, smoking a lot of pot and being a complete lazy worthless mess!! Then I snapped out of it. I dont know what it was. It could have been a number of things that woke me up but I did! And within a year I went from 267 lbs to 192!! I cannot believe I just put my weight on here...but there ya go!! There it is!! 267 friggin pounds I was! Yeesh! My reason for trying this raw lifestyle is because everything that got me to where I am now worked great...but the last year and a half all I have done is maintained my weight loss (which is still pretty rewardable in my book). So...I need to step it up to continue to lose weight and continue on my path to a healthier me!
Im not changing my life COMPLETLY! I feel if I make a decision to do this hardcore for a long period of time...Ill fail. What my intentions are is to try to experience as much as I can in eating raw in the week to come out of it with a new experience! A new way of cooking...well..UNcooking a meal. If I come out of this a week later and think..."wow, I really enjoyed eating this, that and the other" and I can add those dishes to my weekly routine, then thats all I can ask for!
I welcome all criticisim, knowledge and opinions in the next week to come! And mostly, I welcome recipes!! desserts, snacks, meals etc... I am strictly working on a food processor. So...no dehydrators or anything fancy-schmancy. I dont Have a vita-mix or anything heavy duty. But, I have a decent blender. Just keep that in mind when suggesting things!!
ALSO! anyone who knows me knows Im a fan of cooking FOR people. So...if you wanna come over and try something Ill totally be down for that!! It will be another factor to keep me motivated throughout the week!!!
